Phyllis Jean Lindsay, 63, of Hot Springs, Virginia, passed away on January 21, 2026. A woman who was truly “full of life,” Phyllis left behind a legacy of kindness, laughter, and a community deeply touched by her presence.

Born on June 16, 1962, in Bath County, Phyllis was the youngest of nine children born to the late Pete and Nina Baldwin. Though she was the “baby” of the family, she was the glue that held them all together, always ensuring her siblings were cared for with a heart that knew no bounds.

For 38 years, Phyllis shared a life of adventure and humor with her husband, Robert. To know Phyllis was to know her sense of humor-a necessary trait for life with Robert and his endless jokes. Together, they operated Lindsay’s Roost Bar & Grille for 20 years. Phyllis often joked, “I couldn’t tell you how many hamburgers I’ve made in my life,” but the community knew her for more than just the food. She was the woman who would quietly slide a plate to someone short on cash or offer a meal to anyone facing a hard time. She cherished the cards and letters sent by customers from near and far, proudly calling her children to share every “thank you” she received.

Phyllis was a true outdoorswoman. Whether she was hunting, camping, or convincing Robert to go fishing, she was happiest under the open sky. She loved a good song, a dance floor, a game of bingo, and playing cards.

Above all, nothing compared to the love she held for her family. She was immensely proud of her daughters, Jenny and Kayla, and her love for them was a constant, steady force.  Her grandchildren—Alyssa, Austin, Dakota, Ryan, Isaac, Ashley —were her ultimate pride and joy. “Mawmaw” was famous for going all out every Christmas to spoil her babies, ensuring every holiday was beautifully chaotic and full of love. Her grandbabies knew the restaurant was a second home, often stopping in for a milkshake or bringing a friend along for “free food”, because Mawmaw was never going to charge them. They will forever cherish stories of swimming in the pool, camping on the hill and lake, watching fireworks, fishing together, beach trips, and playing rounds of pool. She was so proud of her grandbabies and would talk about them to everyone who walked through the restaurant doors.

Phyllis was preceded in death by her parents, Pete and Nina Baldwin, and three sisters, Jewell Brummitte, Debbie Baldwin, and Arlene Meade.

She is survived by her devoted husband, Robert Lindsay; her daughters, Jenny Brummitte (Mike Entsminger) and Kayla Mace (Travis Gwin); Bobbi Jo, Chris, and Cresha Lindsay; and her adopted son, Robert “Foxy” Baldwin (Crissy Smith), all of Hot Springs. She also leaves behind her sisters, Caroline Hise, Diana Shifflett (Hugh), and Mary Simmons; and her brothers, Richard Baldwin and Boone Baldwin; and many nieces, nephews, and so many dear friends.

A service to honor Phyllis’s life and the kindness she shared with so many will be held at 11:00 a.m., Saturday, February 7, 2026, at McLaughlin & Young Funeral Home.

Phyllis’s greatest wish was to be remembered for her kind heart and the immense love she held for her family. Her loved ones take comfort knowing the Lord has embraced her for all the good she brought into this world. She was a beautiful, caring soul who would help anyone in need, and she will be missed beyond measure.
